Why We Love Them
These perfectly moist Banana Carrot Mini Muffins are toddler tested and auntie approved. They are great for an on-the-go snack. They don’t make a mess because they are made with applesauce instead of oil, which means you won’t have messy fingers to clean. These easy to make muffins are packed with fruits and veggies and much lower in sugar than the average muffin.
I love spending time with my cutie pie nephew. He’s turning two this month and I just can’t believe how fast the time goes. He’s such an amazing little helper and so curious about everything that we do. My mom and I share a dream that one day he will make it on the cooking show MasterChef Junior. So we decided to encourage him to eat a variety of foods right away. He’s fascinated when watching zucchini ribbons fall off the spiralizer and likes to stir ingredients together in a bowl. Little Kitchen Helper
A couple of weeks ago we discovered that he likes spicy food. It actually made him laugh! He’s not so much of a fan of getting his hands dirty though and he will be sure to let you know when they are not up to his standards. His favorite food this month has been my recipe for 3 Ingredient Carrot Fries. I have been making sure we have carrots on hand so I can pop them in the oven for a snack when he comes over. His favorite helping act has been feeding my dogs. He carefully scoops the measuring cup into the tub and pours the food into the bowls. They love him even more for it!
He doesn’t say too many words yet but I can definitely tell when he likes something that I make, and boy does he love these Bunny Banana Mini Muffins. He can easily grab them himself and is known to place a few too many on his plate. I like to send him home with a batch so my sister has an easy snack for him to eat all week. She likes them alot too. I have also stored them in the freezer before, that way I can take them out as needed. I think the little ones in your life are going to love them just as much as my nephew does!
Bunny Banana Mini Muffins

Makes 24 mini muffins
1 cup whole wheat flour
1/4 cup sugar
1/2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup unsweetened applesauce
1 large egg
1/4 cup skim milk
2 medium carrots, shredded
1 medium ripe banana, mashed
- Preheat oven to 375 degrees.
- Coat mini muffin pan with nonstick spray.
- In a large bowl whisk together the dry ingredients.
- Using a separate bowl mix together the wet ingredients.
- Add the wet ingredients to the large bowl with the dry ingredients and stir until just moistened.
- Scoop batter into muffin cups, filling them ¾ of the way to the top.
- Bake for 20 minutes, or until a toothpick inserted in the middle comes out clean.
- Let the muffins cool for 5 minutes in the muffin tin, then remove to a cooling rack.
