The holiday season is upon us and when your house is full of friends and family, casseroles are always a winner when feeding a crowd. When it comes to breakfast, you need something that you can prep ahead of time and pop in the oven as your guests wake up that isn’t too labor intensive, which brings me to this Light and Festive Apple Cranberry French Toast Bake!
Filled with the comfy seasonal flavors of cranberries and apples, this breakfast casserole is a winner! Crunchy pecans, sweetness from 100% maple syrup and warm spices of cinnamon and allspice are just some of the thoughts that will be running through your head as you indulge in this guilt-free dish.
When your breakfast includes whole grains, fruit, healthy fats and lean protein, you are definitely starting out your day right!
Light & Festive Apple Cranberry French Toast Bake

9 oz whole grain french bread,cubed
1/2 c. cranberries, fresh, halved
1/2 c. Granny Smith apples, diced
1/2 c. pecans, chopped
1/4 c. 100% maple syrup
2 tbsp. wheat germ
1/2 tsp. cinnamon
1/4 tsp. allspice
1 egg, whole
1 egg, white only
1/2 c. non-fat milk
1) Dice bread; lay cubes on baking sheet and allow to dry overnight or in the oven at 300˚F for 15 minutes, let cool.
2) Mix all ingredients together, except bread, until well combined. Next, fold bread cubes into mixture.
3) Pour everything into a medium casserole dish. Bake 20 minutes 350˚F. Enjoy!
