Apple “donuts” are a craze that I can live with…
Go ahead and jump on the bandwagon with this one, you are going to love it! What a cool way for both kids and adults to get more fruit into their diet. Pumpkin is a very good source of vitamin A and apples are packed with vitamin C. Both pumpkins and apples provide our bodies with fiber. Many of the apple “donut” recipes you might see use cream cheese. I opted for yogurt instead, which provides protein. This is the time of year when apples are in season. Nothing is better than when you take a bite out of a crisp apple on a fall day. Of course we all think of fall when we start getting the pumpkin recipes out too.
A bonus is that these are super easy to make. Simply top apple slices with a luscious pumpkin topping and you have the perfect protein fiber packed healthy snack. If you are feeling extra wild, these have the potential to be part of a balanced breakfast. I wonder how my coworkers would feel if I brought them into the office one morning?
Are you ready to make these yet?
You probably already have all of this stuff lying around your kitchen right now. All you need are a few ingredients. Gather your apples, yogurt, canned pumpkin, pumpkin pie spice and sweetener such as agave or honey. Grab any toppings you have on hand like sprinkles, chocolate chips, nuts, chocolate or caramel syrup. Seriously, anything that you have ever seen on a donut will work! You can top these babies with anything your heart desires.
Once you have all your ingredients ready, all you have to do is stir together your pumpkin “icing”, slice your apples into a donut shape, and spread the delicious creamy pumpkin mixture on top. Don’t be afraid to add a generous amount of icing. Sprinkle or drizzle your toppings and enjoy!
No apple corer?
Most people probably use an apple corer to remove the center. I didn’t have one on hand so I used a round icing tip to pop out the center of each apple slice and it worked just as well. You could even use a knife to cut a hole out of each apple slice center.

Pumpkin Spice Apple “Donuts” with Greek Yogurt

Makes 15-20 “donuts”
3 small apples, any kind
6 oz Greek yogurt, 0% plain or try Siggi’s® nonfat plain yogurt
½ cup canned pumpkin (not pie filling)
1 tsp pumpkin pie spice
½ tsp agave or honey
Dark chocolate chips
- In a small bowl, mix together yogurt, pumpkin, pumpkin pie spice and cream cheese until smooth.
- Use an apple corer to remove the core.
- Slice apples lengthwise about ½ in thick.
- Spread with pumpkin pie mixture and top with any toppings you want.
- Serve immediately or refrigerate until ready to eat.
