This recipe has some of my favorite ingredients – pesto, sun dried tomatoes and cheese. This is a flavorful recipe to use in the middle of the week to break up the usual boring chicken dinners.
Sun dried tomatoes are amazing! Not only are they a great source of fiber and vitamin C, but they also pack a good mix of sweet and tart all in the same bite.
If you haven’t noticed from my Cheesy Fiesta Chicken recipe, I love topping baked chicken dishes with cheese! It adds the perfect amount of flavor after it is melted.

Sun Dried Tomato Pesto Chicken
Makes 4 servings
4 medium boneless, skinless chicken breasts
¼ cup balsamic vinegar
¼ cup pesto (try our Quick Kale Almond Pesto)
¼ tsp ground black pepper
3 oz sun dried tomatoes
½ cup shredded mozzarella cheese
1) Preheat oven to 350°F
2) Place chicken in a baking dish that has been prepared with non stick spray.
2) Brush vinegar and pesto onto chicken and sprinkle with ground pepper.
3) Place sun dried tomatoes evenly on chicken.
4) Top with mozzarella cheese and bake
5) Bake for 30-40 minutes, or until internal temperature has reached 165°F
Try with green beans and whole wheat penne pasta.
