Nothing says warm weather is here like a refreshing cucumber salad and boy, do I have a recipe that you are going to want to make for your next cook out!


I just tested this one out on my family at our Easter picnic last weekend and it was a hit. The beautiful flavors of oregano, red wine vinegar and olive oil come together to provide a Mediterranean taste, along with plenty of health benefits. The Ultimate Cucumber Salad

Makes 8 servings



2 large cucumbers

½ red onion

1 cup cherry tomatoes

1 green pepper

6.4 oz cheddar cheese cubes (1 package)

½ cup red wine vinegar

½ cup olive oil

2 tbsp dried oregano

Pinch of salt and pepper



  1. Peel and thinly slice the cucumbers.
  2. Dice the onion and peppers.
  3. Cut each tomato in half.
  4. Place the vegetables and cheese to a medium bowl.
  5. Add the vinegar, oil, oregano, salt and pepper and mix to combine.
