The Ultimate Cucumber Salad

Makes 8 servings
2 large cucumbers
½ red onion
1 cup cherry tomatoes
1 green pepper
6.4 oz cheddar cheese cubes (1 package)
½ cup red wine vinegar
½ cup olive oil
2 tbsp dried oregano
Pinch of salt and pepper
- Peel and thinly slice the cucumbers.
- Dice the onion and peppers.
- Cut each tomato in half.
- Place the vegetables and cheese to a medium bowl.
- Add the vinegar, oil, oregano, salt and pepper and mix to combine.
